Yes! You can choose to get a traditional visa stamp on your passport or you can opt for an e-visa. E-visa seems promising as it takes less than a week and you don't have to send your passport out to the consulate.

Any flight to Delhi (Indira Gandhi Airport) that's affordable and reliable should be good. We have used the following airlines and we have found them reliable: Air Canada, British Airways, KLM, Swiss Airways etc. There might be options for direct vs with stops. Pick whatever works for you!
A couple hours before landing, the flight staff may give you a customs form, if not, it will be available after landing in the Immigration area. This will be required when passing through immigration. You will need to provide hotel address(es) and contact information. We will provide you with this contact info closer to the date :)
Following signs for "Arrivals" will get you to Immigration. Have your documents ready such as: Boarding passes, passport, e-visa printout, wedding invitation, hotel booking information, return ticket. Look for "Foreign Passport holders" and get in the queue. This process should be fairly smooth. They may ask how long you are staying and where. You can present the documentation.
After that, you can get your bags and head out. There are multiple ways to get to your hotel from the airport. Best would be Uber. Get an Uber XL if you have a lot of luggage. Make sure you find the designated Uber pick up area before ordering your Uber. Follow directions or ask any official airport staff to get there.

Yes. You can turn on your roaming on your internal sim card but it might get expensive if you are planning to stay for longer. An e-sim is a good way to get a local number and a data plan. We have used Nomad e-sim and it worked great there!

Uber is pretty reliable. The same Uber account you use in your country would work in India. Make sure to check the license plate before you enter the car. DO NOT trust just anyone and do not take a ride with a random taxi driver who's giving you a discount.
